Method
- In a medium-sized bowl, mix together frozen vegetables, pre-cooked white rice, NOT the egg at this time.
- In a small bowl beat the egg with a whisk or fork.
- Preheat air fryer to 350° F | 176° C for 5 minutes.
- Spray a 7" cake pan with oil. Put the mixture in the cake pan in the air fryer
- Cook at 350° F | 176° C for 10-12 minutes, stirring twice during cooking, making sure to chop up the egg as it hardens.
- Pour the egg over the cooked fried rice, and cook for an additional 3-4 minutes, add any additional time you deem necessary.
- Scoop into a bowl, and enjoy!
