Air Fried Pickles

In the past few years, fried pickles have become a trendy appetizer for a variety of chain restaurants. However, when you’re trying to be healthy, these mouth-puckering delights are not always an option.

This is where low-carb recipes team up with the fat-eliminating power of your air fryer.

So if you’re counting carbs but love fried finger foods from your local pub or bar & grill, these delicious low-carb fried pickles are a healthier choice without sacrificing the tastes you crave. Coated with gluten-free almond flour, salt, pepper, and Cajun seasoning, these tiny morsels are packed with salty, sour spice that will tempt you to have seconds.

The best part of all? This is a snack that won’t go straight to your midsection and is gluten-free. If you want to make it vegan too, try using aquafaba instead of eggs. I haven’t tried that yet but hope to soon. If you try it, leave a comment below!

Ingredients
  

  • 1 jar of your favorite dill pickle chips (Claussen are my favorite)
  • 2  eggs (or egg substitute) beaten
  • 1 cup almond flour
  • 1 tsp cajun seasoning or to taste
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. In a small bowl, beat two eggs. Set aside.
  2. On a large plate, mix together almond flour and seasonings.
  3. Spray the basket of your air fryer with your favorite air fryer oil (like avocado).
  4. Dip a pickle chip in the egg wash, immediate coat with flour mixture then place in the air fryer basket. Repeat until your basket is full.
  5. Mist the tops of the dipped pickle chips with oil.
  6. Cook at 400° F / 204° C for 8-10 minutes, turning once.
  7. Plate and enjoy!

Notes

If you aren’t counting carbs, you can replace the almond flour with panko bread crumbs
